What I Eat In A Day #1- February 3, 2016

Hello, I'm back with another post, and this will be more of a inspirational/nutritional post instead of informational post. Every two weeks or so I'll post a "What I Eat in a Day". This post will be compiled of what I eat that day for breakfast, lunch, dinner, and snacks if any. This will help with meal ideas. Hope you enjoy, and use this as a guide!

Tip: Before breakfast, it's very important you hydrate! Every morning, right after I wake up, I like to drink about 17 oz. of lemon water. I usually boil the water first, let it cool, then add in some lemon juice. I like to boil the water beforehand because it's more purified. I've been doing this for a while, before I transitioned into a vegetarian and it's very refreshing. This is such a great way to start off your morning!

Breakfast:
a cup of oats (I like eating my "oatmeal" raw, it's super nutritious and I love it!)
a handful of blueberries
1/4 cup of coconut milk'
half a banana
a couple of dashes of cinnamon
1 or 2 teaspoons of brown sugar (depends on how sweet you want your oats)

snack:
apple

lunch:
avocado sandwich (lettuce, tomato, a little bitty mayo, multigrain whole wheat bread, sliced avocado, salt and pepper to taste)
skinny pop popcorn

snack:
peach

dinner:
eggplant pizzas (eggplants, olive oil, oregano, tomato sauce, diced tomatoes, mushrooms, mozzarella, and parmesan) (feel free to use any vegan cheese) - I'll have the full recipe to this soon.

I hope you enjoyed this What I Eat in a Day! I try to eat as much as possible to get the appropriate amount of calories I need each day. Without the right, healthy amount of calories can be subjected to weight gain. That was the biggest reason why I gained so much weight over the years. Feel free to substitute any of my meals with foods of your liking. I'll be back next with my long awaited recipe (including pictures) of my veggie burgers! I'll make sure as well to do a recipe of my eggplant pizzas very soon.

  2. I was also vegan for 8 months but then I decided that I needed bacon in my life. Drinking hot water with like as I wake up is the best thing you can do. Since I started doing this I barely get sick.
